Our cows deliver their calves on our land about 16 to 20 months prior to their processing date. They are pasture grass fed for 12 months and then grain and grass finished in a spacious paddock. The timing of this whole process is not a precise science. Each animal is unique. We will not process until the animal is finished properly – about 1200 pounds. In the springtime, usually around April or May, we humanely slaughter the cattle on Double D Ranch. From there, our butcher hangs them to let the natural enzymes age them to perfection. We will put you in contact with our local butcher to help you through the cut selection process and ensure that you receive exactly what you expect. Our butcher will cut and wrap your order and will call you when they have it ready to pick up in beautiful Jackson California. We also provide delivery within California and Nevada. We suggest making a day out of it and visiting the nearby wineries or historic mining towns.
A 1,200-pound animal provides about 400 pounds of packaged meat. Bones and organ meat are available at no charge upon request. Above is an example of one of our customer’s custom-cut orders.

Our customers usually pre-order their beef up to a year in advance. We ask for a 20% deposit on all sales. Simply give us a call or send us an email and we’ll take care of the rest.
